Red, White, and Blue Quinoa Breakfast Salad {Recipe}

I love to celebrate holidays with a special breakfast. The irony here is that I am totally NOT a morning person so… often I leave hubby holding the bag, er, pan.

But this 4th of July I have a great idea! A pre-made breakfast “salad” with all the colors of fireworks!

I imagined up my Red, White, and Blue Quinoa Breakfast Salad after seeing the cool tri-colored quinoa sent by Shiloh Farms (free for review)

Red, White, and Blue Quinoa Breakfast Salad {Recipe}

A make ahead breakfast salad to enjoy any time of year (but especially fitting on the 4th of July)
Ingredients
  • 1 cup tricolor Quinoa
  • 2 cups water
  • ¼ cup raw walnuts, chopped
  • ¼ cup dried cranberries (soaked, optional)
  • ½ cup fresh blueberries, rinsed
  • ½ cup plain whole milk yogurt
  • vanilla extract
  • honey
Instructions
  1. Rinse quinoa and put in water to boil. After water comes to a boil, reduce heat and simmer about 15 minutes or until tender. Remove and fluff.
  2. Whisk together yogurt, honey and vanilla extract to taste.
  3. Assemble salad by placing a scoop of cooked quinoa (warm or cold) into a bowl. Drizzle with honey.
  4. Top with walnuts, cranberries, and blueberries.
  5. Drizzle honey-vanilla yogurt over all.
  6. Enjoy

I personally prefer this salad a bit warm with the cool yogurt and berries on top. Delicious!
