Eating gluten free has definitely come a long way since I first attempted it over a year ago. There are more options, and they are more readily available! I commend certain local grocery stores and natural foods stores for enlarging their gluten free departments!
One brand you should definitely look out for is Namaste Foods!
For dinner one night, we had Namaste Pasta Pisavera - a delicious dish with Namaste’s own tricolor rice pastas and spice packet. I added chopped fresh tomatoes, black olives, artichoke hearts and roasted red peppers… the overall flavors melded so well and were delicious. I added Feta Cheese on top and it was a fantastic Mediterranean meal!
As with most gluten-free pastas, the texture will not feel exactly the same as wheat pasta, but this pasta was by far the best tasting one I’ve had! I ate leftovers the next day, and it still tasted good (although remember to let refridgerated gluten-free pasta sit out and perhaps add some more liquid as it tends to dry out faster than regular pasta). It tasted great hot for dinner, and then cold for lunch! What a versatile dish!
