I think you’d be hard pressed to find a mom who doesn’t utilize bananas. Seems like all kids love ‘em. (Okay, I know there are people that hate bananas! But that’s okay!). I love how banana come in their own bright yellow packaging! Great for eating on the run.
I had the chance to work with Chiquita brand, not like it was hard, because we usually always have bananas in the house. I was sent a fun Chiquita Mom kit:

My husband’s favorite cake is his grandmother’s banana cake. So for my baby’s 1st birthday, I made a variation of that cake – but tried to health it up a little. Here’s the altered recipe (my husband said if you want the REAL recipe, you have to pay him!):
Health-ier Banana Cake
Cream Together:
- 1/4 cup butter
- 1/4 cup applesauce
- 1 cup Sucanat
Add in:
- 3 eggs
- 1/2 cup sour milk
- 1 T lime juice (could use lemon)
Mix dry ingredients:
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Vanilla Extract
- 2 cups mixed white & whole wheat flour
- 1/4 tsp salt
- Add dry ingredients to wet, and mix briefly. Do not over mix. Fold in 3 mashed bananas.
- Pour into greased cake pans or muffin cups. Bake at 350 degrees 30-35 minutes for cake, 20 minutes for cupcakes.
These cupcakes came out light and with a touch of sweetness and a good banana taste. The mix of applesauce and butter cut the fat and added sweetness (I also cut the sugar and substituted Sucanat from the original recipe). And mixing the two kinds of flour made the flavor not so “wheaty” but not quite as bad for you as all-white flour.
It’s not totally sugar/fat free, but I feel good that I can give my baby a “treat” on his birthday that is a little healthier than the typical birthday cake. Plus I made it from scratch!

I don’t have any fancy ways to eat banana except for banana bread which I do make once in awhile because all the boys like them! P eats a banana almost everyday for snack. He loves them

I eat them most often in breakfast burritos- a generous smear of peanut butter, a layer of sliced bananas, a sprinkling of corn flake cereal & a drizzle of honey rolled up in whole wheat tortilla.
My favorite way to eat banans is just eating them the regular way peel & eat..or make yummy banana bread or banana muffins out of them! Bananas do not last very long in our household!

Yum! I want to try that banana cake now but my favorite ways to eat banana are in my moms banana walnut bread, or just straight from the peel (in this case I like them more green though, once they start to get spots or get sweet they are used for baking)

Both of our girls LOVE bananas. They’ll often eat 2-4 in one setting.

Bananas are big in our household and I think we always get Chiquita – generally of the organic variety. We also limit intake since they can have some binding effects if you know what I mean. Of course, that can be to our advantage if need be. And the bananas that don’t get eaten are allowed to turn black for banana chocolate chip bread. Mmmmmm. Great idea for A’s cake. I’m looking forward to photos from the party. Enjoy!
I like my bananas slightly chilled and slightly under-ripe. Between the men in the house bananas only last a couple of days.

My kids are banana OBSESSED, we go through at least 2 – 3 bananas per day & that’s with me limiting how many they get – they would easily eat 9 a day or more if they were allowed. LOL
I’m a big banana fan – eat them right out of the peel, in smothies, muffins, chocolate dipped and frozen, baked, pudding. I can’t pick just one favorite way. Bananas don’t last long in our house.
